We’re thrilled to share some exciting news: Tides Tavern is joining our family! For decades, Tides Tavern has been more than a waterfront tavern.  It’s a place where friends gather and guests feel at home. Tides has always been a place that brings people together, reflecting the same spirit we celebrate at every Anthony’s restaurant. Welcoming Tides into our family was a natural fit, built on shared values and a love for bringing people together across the Northwest.

“Tides Tavern is a treasured part of the Gig Harbor community, and we’re honored to be entrusted with its next chapter,” said Amy Burns, President and CEO of Anthony’s Restaurants. “My father, Budd Gould, and my brothers, Herb and JJ Gould, share a deep respect for what the Stanley family has built. As fate would have it, my father started Anthony’s 53 years ago as well, committed to upholding the same care, warmth, and Northwest hospitality that have made the Tides such an important gathering place for generations.”

The Stanley family has created something truly special, and as they step into retirement, we’re proud to carry forward their legacy. Tides Tavern’s story goes all the way back to 1910, when Axel Uddenberg built the West Side Mercantile near Gig Harbor’s “Peoples’ Dock,” the town’s first general store by the public ferry landing. Fast forward to the late ’60s and early ’70s, the space was owned by “Three Fingered Jack” Miller—a Jerry Garcia doppelgänger with a booming tenor voice and a flair for the dramatic. His eccentric personality and songs became local legend.

In 1973, Peter Stanley purchased the building and, after renovations, opened the doors to Tides Tavern. From day one, it was more than a tavern. It became a gathering place full of laughter, cheer, house-made food, and carefully crafted beverages.

Today, Tides Tavern continues to be an anchor of the community, where new friendships are made, old ones are celebrated, and memories are created that last a lifetime.

Cooking seafood feels intimidating and cooking seafood incorrectly can scare away even the biggest seafood fans! So, we sat down with Chef Tony to help guide you through the process and give you the confidence to try it at home.

1. Make sure to buy high quality seafood.

  • Use your senses. Make sure to smell the seafood that you’re buying, if it isn’t fresh the smell will tell you so.
  • Ask the seller what the harvest date was (AKA when was it caught or harvested).

2. Do not overcook your seafood.

  • Seafood is delicate, overcooking it can lead to tough, chewy and dry food.
  • Cook on medium/high heat until it reaches an internal temperature of 140 degrees.

3. Use simple ingredients and recipes!

  • You never want to over power the natural flavor of seafood.
  • For example, a simple lemon, garlic and herb recipe for halibut is one of our favorites!

We often hear that people don’t know what to look for when buying seafood, leading them to not buy any at all. So, we asked our seafood buyer to share his knowledge to help empower people to try seafood!

Here’s the scoop:

1. Lead with your nose! Fresh seafood should never have a foul smell.

  • If it smells fishy, sour or like ammonia, steer clear.

2. Shine bright! Seafood should be bright, shiny and moist.

  • The flesh should be bright, shiny, and firm.
  • Eyes should be clear
  • There should not be signs of drying near the edges or discoloration.

3. Find a good source! Find a market or grocery store that is clean and staffed by knowledgeable employees.

  • If it feels cold and clean, chances are their handling and quality control are also cold and clean
  • A friendly team who is eager to share their product and knowledge is a great sign!

4. Ask questions! Learn about harvest methods, where it came from, and if it is wild.

  • Harvest methods can impact quality! For example, hook and line caught fish can indicate higher quality and better sustainability practices. (This is not to say other methods are always bad, but it can give you instant knowledge about a product.)
  • Ask about the country of origin. This can give you an instant indication about how old the product might be.
  • Wild vs. farmed fish. While this is a hot topic, it’s important information for some consumers to know before they make a purchase. Both types of fish can be nutrient-dense, sustainable and delicious! Choose what works for you.

Rising from the Copper Glacier in the untouched wilderness of Southcentral Alaska, the Copper River Delta is one of the last remaining intact watersheds on Earth. This remote and pristine region is home to one of nature’s greatest wonders: the return of wild salmon to the place where their lives began.

Every spring, beginning in May, Copper River Salmon respond to an ancient, instinctive call. They leave the open ocean behind and begin a grueling 300-mile journey upstream, back to the exact spot where they were born. This epic migration ensures the next generation of salmon and preserves one of the most celebrated fish runs in the world.

What makes Copper River Salmon so special? It’s all in the journey. To survive the demanding swim against strong currents and elevation gains, these salmon store up rich reserves of Omega-3 fatty acids and natural oils. The result is a fish with exquisite texture, brilliant color, and a deep, savory flavor that chefs and seafood lovers eagerly await each year.

This incredible natural process is closely managed by the Alaska Department of Fish & Game. Before the harvest begins, state biologists carefully monitor how many salmon have successfully reached their spawning grounds. Only after sustainable levels are met is the commercial fishing season opened—an opportunity granted to just a select group of skilled fishermen.

At Anthony’s Seafood Company, we’ve been part of this tradition for over 40 years. Each season, we’re among the first to bring the prized Copper River Salmon from the Alaskan wilds straight to our guests’ tables in the Pacific Northwest.

Leading the charge is Tim Ferleman, our head seafood buyer and former executive chef. For Tim, this isn’t just a job—it’s a mission. As soon as the first salmon are caught, they’re flown to Seattle within 12 hours, where Tim and our team are waiting.
